Tamales

Corn massa, stuffed with Ricado  (Annatto-seed) base sauce and meat (usually chicken), wrapped in Banana leaf and cooked in water.

Fry Jack

Same dough as the tortilla just fried, it is especially delicious when stuffed with eggs, cheese, beans, ham, sausages – your choice.

Escabeche

Onion and chicken soup with a rich, all-spice flavour.

Cow foot soup

the name says it all. Savoury, tuneful and rich – it’s delicious, comforting and nourishing after a night out.

Relleno negro /Black dinner

a rich black soup with chicken, hardboiled egg and often ground beef.

Street Tacos

Thin white or yellow corn tortilla with stew chicken and a choice of cabbage or onion.

Roasted corn kernels with coconut milk cooked in corn leaf.  Usually made without meat.
