Tamales
Corn massa, stuffed with Ricado (Annatto-seed) base sauce and meat (usually chicken), wrapped in Banana leaf and cooked in water.

Fry Jack
Same dough as the tortilla just fried, it is especially delicious when stuffed with eggs, cheese, beans, ham, sausages – your choice.

Escabeche
Onion and chicken soup with a rich, all-spice flavour.

Cow foot soup
the name says it all. Savoury, tuneful and rich – it’s delicious, comforting and nourishing after a night out.

Relleno negro /Black dinner
a rich black soup with chicken, hardboiled egg and often ground beef.

Local chicken soup
Rich soup made of local chicken which have a more gamey flavour.

Garnaches
Fried corn tortilla topped with beans, cheese and cabbage.

Panades
a relative of empanadas, fried corn Massa stuffed with meat/beans. served with onion and cabbage

Salbutes
Fried corn Massa topped with meat and vegetable.

Street Tacos
Thin white or yellow corn tortilla with stew chicken and a choice of cabbage or onion.

Johnny cake
Delicious local buns, made with coconut milk. Best when fresh.

Dukunu / Tamalitos
Roasted corn kernels with coconut milk cooked in corn leaf. Usually made without meat.

Rice n' Beans
The rice is cooked together with the beans.

‘Bile up’ (boil-up)
A Stew with hard boiled eggs, fish, meat, root vegetables and plantain.

Pupusa
Corn Masa stuffed (mainly) with cheese, refried bean an chicharron accompanied pickled cabbase and tomato salsa.

Flavorful Milk and seaweed concoction (and often peanuts) Sold in the market

Sere
Cocount milk based broth loaded with brown yams, coco (taro), plantain okra and fish
